Job Requirements
- Education in culinary arts or hospitality or equivalent experience
- Experience as a chef in a leadership role
- Ability to manage budgets and control costs
- Strong communication and interpersonal skills
- Commitment to maintaining high food safety standards
- Physical ability to perform moderate work including lifting up to 50 lbs
- Willingness to adhere to safety protocols involving equipment and kitchen environment

- Proven track record as an executive chef or leadership culinary role
- Expertise in food cost control, team building, and kitchen management

- Commitment to food safety and cleanliness standards
Job Duties
- Monitor weekly schedule for the culinary team and submit schedules to the general manager
- Keep accurate payroll records and monitor payroll to minimize employee costs
- Requisition, interview, screen, hire, orient, and train kitchen employees
- Document performance during probation and ongoing training sessions
- Manage progressive discipline and termination processes with HR approval
- Develop and propose department maintenance budgets
- Establish and administer safety programs and monitor compliance
- Ensure compliance with state and federal laws, regulations, and licenses
- Monitor and approve invoices using accounting software
- Establish and maintain food and beverage manual reflecting service standards and health codes
- Plan meals and prepare menus considering department activity
- Establish standardized recipes to ensure consistent quality and portion control
- Inspect food deliveries and storage conditions
- Communicate daily with food and beverage manager/director regarding performance
- Engage in front of house visits for member interaction
- Manage multiple outlets effectively
- Comply with strategic partnership programs to maximize savings
- Maintain cleanliness and organization in all kitchen areas
- Complete opening and closing checklists
- Prepare and submit employee schedules and payroll summaries
- Adjust schedules to ensure efficient staffing
- Assist with operational budget preparation and adherence
- Attend department head and employee meetings
- Monitor daily financial and inventory activities
- Conduct daily facility walkthroughs to ensure safety and presentation
- Protect club assets
- Operate within established guidelines and policies
- Maintain Food Manager's Certificate
- Assume complete control of the kitchen
