Job Requirements
- High school diploma or equivalent
- 3-5+ years of culinary or kitchen management experience
- Experience in high volume foodservice operations
- Knowledge of dietary restrictions and food allergens
- Ability to manage institutional and batch cooking
- Hands-on chef skills
- Certification in ServSafe
- Proficiency in computers including Microsoft Office suite
- Must be committed to following safety and sanitation regulations
- Ability to work collaboratively with kitchen staff
- Willingness to engage in client satisfaction initiatives
Job Qualifications
- 3-5+ years of progressive culinary or kitchen management experience depending upon formal degree or training
- High volume foodservice operations experience
- Experience with different dietary restrictions, modifications and allergens
- Institutional and batch cooking experience
- Hands-on chef experience a must
- Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
- Proficient with Microsoft Office (Word, Excel, PowerPoint), Outlook, E-mail and Internet
- ServSafe certified
- Willingness to participate in client satisfaction programs and activities
Job Duties
- Plans regular and modified menus according to established guidelines
- Follows standardized recipes, portioning and presentation standards
- Completes and uses daily production worksheets and waste log sheets
- Tastes completed meals to ensure quality
- Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
- Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- Maintains inventory to stay within established guidelines while assuring that vital product is available when needed
- Makes all decisions regarding utilization of leftover food products within Company guidelines
- Follows federal, state and local health and sanitation regulations as evidenced through audits
- Participates and attends departmental meetings and professional development programs
- Follows facility, department, and Company safety policies and procedures including occurrence reporting
