Job Requirements
- Must have at least 4 years experience in a leadership role as Executive Sous Chef or Executive Chef
- Associates degree in culinary arts or equivalent experience
- Current Food Manager and Allergy training certificate or must attend certification course within 14 days of employment
- Ability to communicate effectively with guests and staff
- Ability to manage high-volume kitchen operations
- Proactive and solutions-oriented mindset
- Ability to work year-round at Winter Park Resort
- Must meet physical demands of the role including walking, talking, seeing, and operating computer and office equipment
- Willingness to work indoors and outdoors with varying weather conditions
- Ability to handle moderate noise levels in the workplace
Job Qualifications
- Associates degree in culinary arts or minimum 4 years experience as Executive Chef or Executive Sous Chef
- Prior food and beverage kitchen management experience
- Knowledge of Microsoft Outlook, Excel, and Word
- Familiarity with Food Trak preferred
- Current Food Manager and Allergy training certificate or willing to obtain within 14 days of employment
- Ability to solve problems effectively
- Strong leadership and communication skills
- Ability to model company Service Excellence standards
Job Duties
- Plan and develop menus with Vice President of Food & Beverage for various outlets, specialty menus, and banquets & catering
- Research, develop, modify and test recipes
- Maintain updated and accurate costing and documentation of all dishes
- Ensure compliance with health and safety procedures and company policies
- Manage day-to-day operations and assignments of kitchen staff, communicate goals, and prioritize work
- Supervise kitchen staff regarding food handling, rotation, and sanitation
- Support Culinary Management team as manager on duty when necessary
- Oversee proper operation and maintenance of kitchen equipment
- Open and close kitchens according to schedule and guidelines
- Assist in creating and following prep, cleaning, and closing lists
- Supervise and coordinate food, supply, equipment, and inventory control purchasing
- Coordinate food and menu costing and establish inventory procedures
- Collaborate with sales team and department leaders to drive revenue
- Adjust banquet and wedding menus for profitability and team training
- Plan staffing needs and work schedules
- Oversee all food preparation, quantity, and production activities
- Ensure menu items meet established recipes and standards
- Train staff and provide necessary tools and equipment
- Maintain efficient, clean, and organized stations and work areas
- Receive and properly store food
- Audit portion control and quality continually
- Meet budgetary goals for cost of goods and labor expenses
- Run kitchens in relief or emergency situations
- Ensure compliance with company policies and regulatory requirements
- Provide presence and supervision as needed
- Attend weekly F&B Manager and Banquet BEO Meetings
- Supervise cleaning and organizing of storage areas
- Perform other duties as assigned
