Job Requirements

  • High school diploma or equivalent
  • five to seven years of experience in commercial cooking with minimum two years in management
  • culinary apprenticeship or certification preferred
  • knowledge of food safety and hygiene standards especially HACCP
  • strong leadership and communication skills
  • hands-on experience in high-volume food production environments
  • ability to manage budgets and control costs
  • proficiency in training and developing culinary teams
  • commitment to maintaining high quality and safety standards
  • ability to work on-site near Portland International Airport, Oregon

Job Qualifications

  • Five to seven years of experience in commercial cooking
  • at least two years in a management position
  • apprenticeship or certification from culinary school preferred
  • additional certifications such as diet chef or industrial chef preferred
  • knowledge of food and hygiene regulations including HACCP
  • financial understanding

Job Duties

  • Oversee all food production activities in responsible CSC
  • manage inventory deviations and initiate countermeasures
  • control and adjust production plans and estimate consumption
  • ensure compliance with recipe specifications and conduct sense-checks
  • participate in food product and menu development
  • update and distribute catering manuals within responsible CSC
  • control cost for budget, personnel, and material expenses
  • coordinate countermeasures for customer complaints
  • check service schedules and assess economic profitability
  • establish training strategy and plans for kitchen staff
  • represent kitchen staff to external stakeholders
  • stay updated on industry trends and ensure alignment with design chefs
  • ensure appropriate production technology is in place
  • participate in marketing activities
  • ensure quality of goods received
  • maintain tidiness in food storage and adherence to first in-first out principle
  • enforce hygiene, health, safety standards, and HACCP regulations
  • properly organize, staff, and direct area of responsibility
  • guide, motivate, and develop employees
  • implement company values and management principles
  • control cost budget and initiate corrective actions
  • support company initiatives such as Global Quality Standard, HACCP, Lean Manufacturing
