The role of Cook at Southcoast Health’s Charlton Memorial Hospital in Fall River, MA, is a pivotal position responsible for supporting the food production operations that sustain patients, staff, and visitors. This position is offered as a per diem role with flexible shifts that include day and evening hours, along with weekend and holiday rotations. A typical work schedule could range from early mornings starting at 4:45 a.m. to evening shifts ending at 7:00 p.m. The Cook plays a hands-on role in preparing short-order foods, made-to-order meals, and special culinary requirements such as Garde Manger. They are accountable for scratch cooking soups, stews, chowders, and chili, ensuring that food quality meets the highest standards for taste, temperature, and presentation. The Cook must monitor food production closely, identifying any issues in flavor or portion size and making necessary corrections to maintain customer satisfaction and cost control. Recipe adherence is crucial for managing meal costs and ensuring consistent yields.
Beyond food preparation, the Cook maintains thorough production and temperature records and promptly communicates any concerns to the Chef or Manager on duty. Job Requirements
- must be fully vaccinated against seasonal Influenza and the COVID 19 virus or to be exempt from the requirement for medical or personal reasons by signing a statement certifying exemption
- available for day and evening shifts including weekends and holidays
- able to work per diem schedule
- capable of performing food preparation duties
- maintain sanitation and food safety standards
- possess necessary culinary skills and experience
- willingness to comply with hospital policies and procedures
Job Qualifications
- equal to completion of four years of high school or the equivalent
- judgment and planning skills required for food preparation
- a minimum of two years culinary experience
- institutional experience preferred
- must be able to pass the Southcoast written culinary exam
- Serv Safe Certification required within 60 days of hire
Job Duties
- prepare short-order foods
- prepare made to order foods and Garde Manger
- perform scratch cooking including soups, stews, chowders, and chili
- monitor food produced for quality, temperature and flavor
- identify and correct food quality issues via tasting, portioning and visual appearance
- extend recipes accurately to ensure proper yields and maintain meal costs
- keep production and temperature records up to date
- report any problems to the Chef or Manager on duty
- maintain all refrigerators and freezers clean and organized
- follow established sanitation guidelines
- perform other reasonable duties as assigned
