Job Requirements
- High school diploma or equivalent
- Minimum 3 years of leadership experience in high-volume culinary environments
- Full availability including weekdays, weekends and holidays
- Ability to manage ordering, scheduling and team members
- Experience in hotel or upscale dining preferred
- Knowledge of Mexican cuisine is desirable
- Commitment to safety, quality, and cost control
- Strong leadership and teamwork abilities
Job Qualifications
- High school diploma or equivalent
- 3 to 5 years of leadership experience in high-volume kitchen environments
- Experience in hotel or high-end dining settings preferred
- Familiarity with Mexican cuisine a plus
- Strong operational and kitchen management skills
- Ability to lead and develop a culinary team
- Knowledge of food safety and sanitation regulations
- Effective communication and interpersonal skills
Job Duties
- Lead daily culinary production including meal preparation, food quality and presentation, compliance with safety and sanitation standards, team productivity and cost control
- Perform general management duties such as systems management, budgeting and forecasting, report generation, department management and meeting facilitation
- Visually inspect and select quality food and beverage products including fruits, vegetables, meats, fish, and spices
- Create and implement new menus and individual food items
- Monitor and develop team member performance including supervision, professional development, counseling, evaluations, scheduling and recognition
- Recruit, interview and train culinary team members
- Ensure compliance with all hotel policies and standards
