Job Requirements

  • High school diploma or equivalent
  • minimum 2 years of supervisory experience in food and beverage operations
  • strong culinary and cooking skills
  • knowledge of food cost analysis and labor control
  • comprehensive understanding of kitchen equipment and operation
  • excellent knife, grill, broiler, sauté, expediter, and garde manger skills
  • ability to minimize food waste and manage food costs
  • effective leadership skills including motivation, coaching, and counseling
  • excellent communication and interpersonal skills
  • ability to maintain composure under pressure
  • proficiency with computer technology and relevant software
  • flexibility to work nights, weekends, and extended hours
  • physical ability to stand, walk, bend, and lift up to 50 pounds for extended periods

Job Qualifications

  • Minimum of 2 years of high volume kitchen management experience
  • catering or banquet management or supervisory experience in food and beverage operations preferred
  • culinary degree desirable or equivalent combination of education and work experience
  • previous experience with employee coaching, counseling, and documentation
  • experience establishing, documenting, and enforcing food safety and workplace safety procedures
  • knowledge of purchasing, receiving, and inventory control
  • Serve Safe Certification strongly preferred
  • Allergy Awareness Training preferred

Job Duties

  • Prepare high-quality meals in accordance with company standards and menu specifications
  • oversee kitchen staff during all meal periods
  • maintain and adhere to health and food safety programs per state and federal regulations
  • manage standard operating procedures and kitchen systems including preparation logs, inventories, product usage, and reporting
  • conduct administrative and training programs for staff development
  • control food and labor costs for financial prudency
  • program and design menus for all meal periods
  • ensure health and safety standards in absence of the Executive Chef
  • foster a cohesive and motivated kitchen team to produce high-quality food promoting profitability and positive culture
