The Executive Sous Chef plays a critical leadership role within this culinary establishment. This is a full-time position with responsibilities extending across various kitchens and dining operations. The role is integral to ensuring that all culinary products from the Chef's Case, Cafe on the Run, and Catering services are produced to the highest standard. The Executive Sous Chef will use independent judgment to make important employment-related and business decisions such as hiring, promoting, and disciplinary actions, as well as make recommendations on product and department strategies. They oversee the daily job responsibilities of line cooks and prep cooks to ensure production goals are met efficiently and within budgetary limits.
A significant part of the role involves scheduling and managing kitchen staff while maintaining a sterile and sanitary environment across all work areas, including walk-ins and storage spaces. The Executive Sous Chef is also responsible for assisting with new product development and menu costing, demonstrating a blend of creative culinary skills and financial acumen. Proficiency with automated reporting systems and a deep understanding of inventory, food cost control, scheduling, and labor management are essential. The ability to supervise, train, and cross-train kitchen staff ensures continuous operational excellence and staff development. The Executive Sous Chef must be adaptable, prepared to work flexible schedules including openings, closings, and weekends, and step into the role of Executive Chef when needed. Job Requirements
- 3+ years of experience as a sous chef
- Proven leadership experience in a complex environment with multiple direct reports
- Professional culinary training or equivalent work experience
- Excellent customer service skills
- Assist in new product development and menu costing
- Excellent communication and organization skills
- Experience in ordering, inventory maintenance, and shrink control
- Proficiency with automated reporting systems including inventory, food cost, scheduling, time and attendance, and labor preferred
- Ability to maintain an efficient operation and troubleshoot and report any malfunctions of equipment
- Ability to supervise, train, and cross-train kitchen staff
- Maintain sanitation standards throughout the work area
- Ability to work a flexible schedule including opening, closing, and weekend shifts
- Responsible for total kitchen production in absence of the executive chef
