The Manager in Training (MIT) position at Pollo Nation is an exciting leadership development role designed to prepare individuals for future management positions through comprehensive, hands-on experiences in various aspects of restaurant operations. This full-time role supports daily management functions including food safety adherence, exemplary guest service, efficient labor management, and the development of a highly engaged team. The MIT will work closely with the Training General Manager, Field Training Manager, and other leaders to foster a high-performance culture and ensure operational excellence in a busy restaurant setting.
As a Manager in Training, you will be responsible for overseeing day-to-day restaurant operations to maintain food quality, safety, cleanliness, and consistent customer service. This includes supporting and coaching a team of over 25 employees to perform at their best, modeling excellence in guest interactions, and ensuring compliance with company and regulatory standards. You will assist with scheduling, inventory management, payroll, cash handling, and financial reconciliation, gaining direct exposure to the critical components of restaurant management. Your role will also involve participating in hiring, onboarding, and ongoing training for both hourly team members and future leaders, promoting their growth and engagement.
This role requires a positive, adaptable mindset to embrace change and overcome challenges in a dynamic environment. Effective communication skills and the ability to make sound decisions under pressure are essential to support the restaurant’s smooth operation and continuous improvement. The MIT will conduct daily pre-shift huddles to align the team on service goals and operational priorities, ensuring everyone is motivated and prepared to deliver exceptional guest experiences.
Applicants should have at least a high school diploma or GED, with 3 to 5 years of restaurant industry experience including 2 years in a supervisory or leadership role. ServSafe certification is mandatory, along with proficiency in technology systems such as HRIS platforms and Microsoft Outlook. Basic computer skills, particularly with Excel, are preferred. Physical demands include sitting, standing, walking, and using hands to handle or feel objects regularly. The work environment is designed for safety and comfort with moderate noise levels. - Supervise and assist in leading a team of 25+ employees ensuring adherence to company and regulatory standards
- Conduct daily pre-shift meetings huddles to align teams on goals service standards and operational updates
- Assist in scheduling inventory ordering payroll fund handling and reconciliation processes
- Participate in hiring onboarding training and developing both hourly team members and future leaders
