Job Duties

  • Train kitchen associates on job performance including plate presentation and display work
  • Write schedules and evaluate all kitchen personnel
  • Maintain clear verbal and written communication between management and staff
  • Write and present disciplinary actions when necessary
  • Provide necessary tools and equipment to associates
  • Take immediate action on kitchen problems
  • Participate in department, staff, and kitchen meetings as well as inventory and MOD programs
  • Ensure high quality and properly prepared food according to recipes
  • Assist in establishing goals, standards, and objectives for the operation
  • Supervise kitchen staff and utility and sanitation associates
  • Maintain use records, roast meat charts, and recipe cards
  • Prepare recipe cards and picture presentations for menu items
  • Submit payroll hours timely
  • Monitor all kitchen areas including front line, banquet productions, and plating
  • Ensure sufficient service equipment supplies
  • Manage proper staffing without wasting labor hours
  • Taste test food items for quality and consistency
  • Ensure adequate preparation for meal periods minimizing waste
  • Enforce recipe adherence without deviation
  • Follow standards for storage, rotation, production, portions, quality, and appearance
  • Communicate problems and alternatives with Executive Chef and Food and Beverage Director
  • Maintain sanitation standards and cleaning schedules
  • Adhere to corporate procurement programs
  • Help meet cost goals related to food, kitchen labor, and expenses
  • Promote positive employee relations and follow HR policies
  • Reduce labor costs effectively without sacrificing customer satisfaction
  • Resolve kitchen issues calmly and keep staff focused
  • Provide a safe work environment following safety procedures
  • Memorize food recipes and preparation instructions
  • Handle and operate dangerous kitchen equipment
  • Complete delegated tasks from management
