This position is responsible for directly procuring all food items and adhering to standard recipes and line check sheets to set up and maintain their station according to daily prep sheets. The successful candidate will consistently uphold high standards of food quality, cost control, presentation, and flavor. Responsibilities include collaborating with chefs and supervisors to prepare menus and specials, managing daily prep lists and production schedules, and following organized sanitation procedures throughout the kitchen. The role requires proficiency in various kitchen stations, including hot line and cold line stations, butchery, sauce and soup production, and banquet production. The candidate will prepare a variety of hot line items such as those cooked on the fryer, griddle, char broiler, oven, and middle stations.

The position demands thorough cleanliness and sanitation adherence at the end of each shift, including cleaning one’s station and line area. Additional duties include assisting with food procurement, delivery, storage, and usage, as well as putting away deliveries when necessary. The candidate will also support the Chef and Sous Chef in preparing and serving cold food at banquets and other clubhouse functions. Due to the nature of the work, this role requires standing for long periods and the willingness to work a flexible schedule, including days, nights, weekends, and holidays.
