Job Description

The Indigo Road Hospitality Group (IRHG) represents a dynamic and innovative force within the hospitality industry, dedicated to redefining guest experiences through exceptional service and culinary craftsmanship. Founded in 2009 by Steve Palmer, IRHG has grown into a respected operator with a portfolio of vibrant restaurant concepts and boutique hotels, all rooted in a philosophy that prioritizes the well-being of its team members. By nurturing a supportive and empowering workplace, IRHG ensures its teams deliver outstanding service that resonates from the kitchen to the front of house, creating memorable moments for every guest. Based in Washington DC, the group is renowned for blending hospitality tradition with modern creativity across its venues.

Among IRHG's celebrated brands, O-Ku stands out as a flagship Japanese culinary experience. Established in 2013 by the same visionary founder, O-Ku has expanded to nine locations as of 2024, offering an immersive journey through authentic and innovative Japanese cuisine. Each restaurant strikes a balance of contemporary style and cultural reverence, presenting dishes that tell compelling stories of flavor and craftsmanship. This expanding brand continues to challenge culinary boundaries in the region, setting a high standard for Japanese dining in the metropolitan area.

The role of Traveling Sushi Chef within IRHG and specifically for the O-Ku concept is integral to maintaining the highest quality and authenticity across its sushi operations. This position demands an experienced sushi chef skilled in preparing traditional Japanese delicacies such as nigiri, maki, and hand-pressed rolls using fresh, carefully chosen ingredients. The chef must master the art of sushi preparation, respecting time-honored techniques while ensuring consistency and innovation in flavor profiles. As a traveling chef, the role involves supporting multiple locations, which requires flexibility, excellent time management, and the ability to adapt quickly to different work environments and team dynamics.

Beyond culinary execution, the Traveling Sushi Chef serves as both a leader and collaborator, inspiring kitchen teams with a culture grounded in creativity, quality, and hospitality. The position involves hands-on involvement during peak service times and close coordination with general managers and home office leadership to optimize kitchen operations. Responsibilities also include managing inventory, upholding stringent health and safety standards, and contributing to financial oversight related to food costs and labor management. Success in this multifaceted role hinges on a servant leadership mindset, an entrepreneurial spirit, and accountability to meet predefined business objectives.

Candidates joining The Indigo Road Hospitality Group can expect a competitive compensation package, including a base salary complemented by paid time off after 90 days. The company supports employee health and wellness with comprehensive medical, dental, and vision insurance plans. In addition, IRHG offers financial benefits such as a 401(k) retirement plan with a company match and a unique zero-interest home loan program designed to help employees achieve homeownership. Perks also extend to generous employee discounts across the group's 15 restaurant concepts and boutique hotels, along with family-friendly policies that include four weeks of paid parental leave.

This opportunity is perfect for a seasoned Executive Chef with over two years of experience in elevated Japanese cuisine, who embraces a flexible schedule including nights, weekends, and holidays. IRHG values diversity and is committed to providing an inclusive work environment where everyone has a seat at the table. The Traveling Sushi Chef role offers an exciting pathway to expand culinary expertise, lead diverse teams, and grow within a company that champions hospitality excellence at every level.
