Job Requirements

  • Education equivalent to an associate's degree or relevant experience
  • Minimum five years progressive culinary or kitchen management experience
  • Ability to travel overnight as required
  • Strong knowledge of food safety and sanitation practices
  • Proficient in use of computer software including Microsoft Office suite
  • Ability to train and lead kitchen staff
  • Effective communication and organizational skills
  • ServSafe certification preferred
  • Commitment to compliance with local, state, and federal regulations

Job Qualifications

  • A.S. degree or equivalent experience
  • 5+ years of progressive culinary/kitchen management experience
  • Extensive catering experience is a plus
  • High volume, complex foodservice operations experience is highly desirable
  • Institutional and batch cooking experience
  • Hands-on chef experience
  • Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation
  • Experienced with Microsoft Office, Outlook, Email, and Internet
  • Willing to participate in client satisfaction programs
  • ServSafe certified is highly desirable

Job Duties

  • Plans regular and modified menus according to established guidelines
  • Follows standardized recipes, portioning and presentation standards
  • Completes and utilizes daily production worksheets and waste log sheets
  • Tastes completed meals to ensure quality
  • Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation
  • Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
  • Maintains inventory of food and non-food supplies
  • Makes decisions regarding utilization of leftover food products
  • Complies with health and sanitation regulations and department sanitation procedures
  • Follows facility, department, and company safety policies and procedures
  • Participates and attends departmental meetings and staff development programs
