The Sous Chef will work closely under the Executive Chef, assisting in all facets of kitchen operations across main, grill, and banquet kitchens.
Responsibilities will include managing kitchen teams, overseeing food preparation to uphold ClubCorp's quality standards, menu development, scheduling, ordering and inventory management, and ensuring cleanliness and sanitation standards are met. The position requires supervising staff performance, conducting employee training and development, and maintaining efficient labor and cost controls. Job Requirements
- 3-5+ years of experience in a similar role
- Current state-issued Health Certificate
- Required immunizations
- ServSafe certification
- Ability to work nights, weekends, holidays, and extended shifts
- Physical capability to lift, push, pull, and carry heavy objects
- Proficiency in Microsoft Word, Excel, and Outlook
- Strong communication and interpersonal skills
- Ability to train and manage kitchen staff
- Knowledge of food safety and sanitation regulations
- Strong organizational and multitasking abilities
- Experience with kitchen operations and food preparation
- Flexibility to work independently and in a team
- Basic mathematical skills
- Experience with US Foods Menu Profit Pro preferred
Job Qualifications
- 3-5+ years of experience in a similar role within upscale banquet, hotel, or convention center environment including supervisory experience
- Current state-issued Health Certificate and required immunizations
- ServSafe certification
- Demonstrated technical knowledge and hands-on experience with food preparation and kitchen operations
- Strong interpersonal skills to work effectively with co-workers, supervisors, guests, and vendors
- Excellent verbal communication, active listening, and customer service skills
- Proven experience training, mentoring, motivating, and evaluating staff
- Capable of delegating responsibilities effectively
- Strong problem-solving and decision-making abilities
- Highly organized with ability to prioritize, manage multiple responsibilities, and maintain attention to detail
- Self-motivated and capable of working independently and collaboratively
- Flexible schedule including nights, weekends, holidays, and extended shifts
- Physically able to lift, push, pull, and carry heavy objects
- Proficient in Microsoft Word, Excel, and Outlook

- Working knowledge of food safety, sanitation, and health regulations

Job Duties
- Responsible for proper preparation, excellence of product, profit, and labor cost
- Organize and help in the service of all activities concerning a la carte, employee meals, and private dining rooms
- Consistent preparation and presentation based on overall standards including portion size of daily specials, salads, entrees
- Train, supervise, direct, and/or performance manage employees as needed
- Attend food and beverage, banquet meetings, and line-ups
- Prepare work schedules and monitor payroll costs and Kronos reports
- Ordering, receiving, and proper rotation of food and kitchen goods
- Menu development for a la carte and banquet menus and special requests
- Responsible for expediting at meal periods ensuring proper quality, portioning, and presentation
- Adhere to cleaning schedules and sanitation duties
- Responsible for cleanliness and sanitation of work areas and kitchens
- Assist employees, members, and guests to ensure delivery of three steps of service
- Notify leadership of member/guest complaints and practice service recovery
- Interact professionally with members/guests for changes and last-minute requests
- May perform other tasks as needed
- Follow company and department policies, standards, and manuals
- Multi-task and work at an efficient pace
- Follow instructions as directed
- Maintain good conduct and safe working habits
- Attend daily lineup and participate as requested
