The Executive Chef, Performance Dining position at Canvas Stadium is a full-time role committed to supporting the athletic success of student athletes, coaches, and staff by providing carefully crafted meals that optimize performance and health. Reporting directly to the Senior Executive Chef, this role is responsible for overseeing all culinary operations within the Performance Dining program, ensuring that nutritional goals are met with precision and excellence. The Executive Chef plays a pivotal role in maintaining operational efficiency, staff training, and fostering a positive work environment aligned with Oak View Group's values and Colorado State University’s athlete-centric approach.

Job Requirements

  • Bachelor's degree or equivalent culinary management experience
  • Minimum 5 years of culinary management experience, preferably in athletic nutrition
  • Valid Food Handler's Card and alcohol service permit
  • Certification in nationally recognized food safety and sanitation program
  • Ability to work flexible hours including early mornings, evenings, weekends, and holidays
  • Strong leadership and communication skills
  • Proficiency in relevant software including Microsoft Office
  • Ability to maintain professional appearance and demeanor at all times
  • Ability to manage labor and food costs effectively
  • Experience collaborating with nutrition professionals and athletic staff

Job Duties

  • Develop menus and recipes focused on nutrient-dense foods to optimize student athlete health
  • Achieve budgeted food cost percentages through comprehensive control measures including portion control standards and waste reduction strategies
  • Manage and control labor costs through strategic scheduling and employee development programs
  • Oversee preparation of all food products ensuring compliance with quality and consistency standards
  • Lead menu development accommodating client-specific requests and preferences
  • Monitor food production ensuring recipe specifications and kitchen timings are met
  • Supervise all line setup, prep, and breakdown activities
  • Coordinate storage, maintenance, and repair of kitchen equipment
  • Assist with catering delivery and setup as needed
  • Facilitate training and professional development programs
  • Provide leadership and mentorship to kitchen team
  • Maintain a positive and compliant employee relations environment
  • Foster open communication and teamwork across departments
  • Identify and resolve operational challenges swiftly
  • Ensure compliance with health, sanitation, safety and employment regulations
