The role of a Teppan Chef at Benihana is specialized and multifaceted, focused on delivering an exceptional dining experience by combining cooking expertise with interactive guest engagement. The Teppan Chef is responsible for preparing and cooking a variety of meats, seafood, poultry, vegetables, and other dishes on hibachi tables directly in front of guests, ensuring correct food portions and maintaining impeccable cleanliness and sanitation standards. This position requires a blend of culinary skill, showmanship, and exceptional customer service to effectively perform cooking demonstrations that entertain and satisfy guests. Alongside cooking, the chef must promptly and courteously respond to guest inquiries and preferences, maintain the kitchen and cooking stations, and adhere strictly to company standards for food quality and presentation.

Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable
  • Ability to engage and entertain guests
  • Knowledge of food safety and sanitation standards
  • Ability to stand for extended periods
  • Availability to work flexible hours including nights, weekends, and holidays

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring appropriate and courteous guest interaction
  • Provide guests with information about Benihana foods during cooking or upon inquiry
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preferences and follow instructions
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment
  • Perform shift opening and closing duties including cleaning and maintenance tasks
  • Maintain kitchen, cooking areas, and food storage cleanliness and organization
  • Report kitchen equipment or maintenance issues to the manager on duty
  • Comply with company standards on food portioning, cooking methods, and quality
  • Prepare foods according to portion standards and recipe specifications
  • Adhere to food presentation and garnish guidelines
  • Handle, store, label, and rotate foods properly following safety laws and FIFO method
  • Use knives and kitchen tools for food preparation
  • Follow company guidelines on alcoholic beverage service
  • Maintain a clean and neat appearance while being courteous to guests
  • Notify manager on duty regarding guest dissatisfaction or accidents
  • Participate in guest special occasion celebrations and take photos if requested
  • Perform other duties as assigned by a supervisor
