Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • perform a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • readily provide guests with information about Benihana foods as they are being cooked or upon guest inquiries
  • respond promptly and courteously to guest requests
  • ask guests for cooking preference and follow guest instructions
  • prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using a variety of kitchen equipment
  • perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • maintain kitchen, teppan cooking areas, kitchen equipment and food storage areas clean, sanitary and organized
  • report kitchen equipment or maintenance issues
  • comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
  • prepare foods in accordance with company portions standards and recipe specifications including battering, breading, seasoning and marinating foods
  • adhere to company guidelines on proper food presentation and garnishes
  • handle, store, label and rotate foods properly in accordance with health safety laws
  • use knives, utensils and equipment to portion, cut, slice, julienne, whip, beat, maintain temperature, chill or freeze food
  • adhere to company guidelines on alcoholic beverage service
  • present a clean and neat appearance and use a courteous manner with all guests
  • notify manager on duty when guests are not satisfied or if an accident occurs
  • participate in guest special occasion celebrations
  • perform other duties as assigned
