This role of Sushi Sous Chef at Sushi-san Nashville is designed for a culinary professional with a passion for Japanese cuisine and a demonstrated ability to lead kitchen operations. The position demands at least two years of sushi chef experience and requires mastery in preparing a variety of sushi types including nigiri, sashimi, maki, and specialty rolls. You will be overseeing the back of house (BOH) operations, managing the kitchen team, ensuring the quality and consistency of all food items, and supporting the General Manager and other leadership in maintaining smooth, efficient service. Your expertise in knife skills and fish butchery will be critical to uphold the high culinary standards synonymous with the Sushi-san brand.

Job Duties
- Run BOH shifts and ensure effective and efficient BOH operations including food prep and cooking
- Ensure adequate inventory levels of food and supplies
- Supervise the kitchen, dish, and all other BOH teams
- Lead BOH pre-shift meetings and participate in line, temp and cooler checks and food tastings
- Partner with GM and designated managers to review and maintain recipe books
- Perform regular line checks to ensure quality of menu items
- Purchase and order food product and supplies for the restaurant
- Assist with tracking and controlling food cost
- Communicate food production and timing issues between FOH and BOH
- Partner with GM and management team to interview, hire, onboard, train, supervise and develop BOH employees and teams
- Model and promote teamwork across all teams
- Use tact and good judgment when dealing with guests, vendors and employees
- Work a variety of shifts including early mornings, late nights and weekends
- Move and lift weights up to 50 pounds as needed
