The Sushi Cook position at Hissho Sushi is a full-time opportunity involving early morning shifts, weekday and weekend work, with occasional overtime. This role is integral to the shared production facility where fresh sushi products are prepared and assembled. As a Sushi Cook, you'll engage with both automated machinery and manual processes to produce sushi that meets the company’s high standards. Operating Suzumo automated sushi rolling and cutting machines, and handling tasks like preparing sushi rice, seafood, and vegetables according to standardized recipes, will be part of your daily work. Maintaining logbooks documenting rice pH levels and temperature readings also forms an essential part of your responsibilities to ensure food safety and quality.

This role requires adherence to rigorous food safety and sanitation protocols, including HACCP and GMP standards, to maintain the highest hygiene and safety levels in the production environment. In addition to production work, Sushi Cooks assist with daily setup, cleaning, and equipment sanitation, playing a key role in sustaining a clean and efficient workspace. By supporting continuous improvement and process consistency, the position contributes to the ongoing success and growth of Hissho Sushi. Job Requirements

  • ServSafe certification or willingness to obtain
  • Experience in restaurant, food production, or sushi-making preferred
  • Basic knowledge of food safety and sanitation procedures
  • Willingness to work evenings, weekends, and production shifts
  • Ability to lift up to 25 lbs and stand for extended periods
  • Effective communication skills with team members and supervisors
  • Ability to follow detailed recipes and standard operating procedures
  • High attention to detail and product quality consistency
  • Willingness to learn and operate sushi-making equipment
  • Capability to adhere to production schedules and meet deadlines
  • Flexibility to rotate between various production and sanitation tasks

Job Qualifications

  • ServSafe certification or willingness to obtain
  • Restaurant, food production, or sushi-making experience preferred
  • Basic understanding of food safety, sanitation, and proper handwashing procedures
  • Ability to effectively communicate with team members and supervisors
  • Ability to follow recipes, portioning guides, and standard operating procedures
  • Strong attention to detail when preparing, rolling, cutting, labeling, and packing products
  • Ability to maintain consistent product quality and presentation
  • Willingness to learn how to use sushi rolling, cutting, and rice production equipment
  • Ability to follow daily production schedules and meet required order deadlines
  • Willingness to rotate between prep, sushi production, packaging, labeling, and sanitation duties

Job Duties

  • Preparing sushi rice, seafood, and vegetables following Hissho's standardized recipes
  • Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified
  • Rolling and cutting sushi using Suzumo automated machines
  • Following batch sheets and production targets for accuracy and efficiency
  • Packaging and labeling finished trays using BOHA terminals
  • Maintaining strict food safety and sanitation standards (HACCP/GMP)
  • Assisting with daily setup, cleaning, and equipment sanitation
  • Supporting continuous improvement and process consistency across the team
