This role offers an exciting opportunity for culinary professionals passionate about Asian cuisine, specifically in sushi or wok cooking. The position is primarily night shifts, including weekends and occasional Sundays, with some shifts requiring early starts for preparation and late finishes for closing duties depending on business needs. Candidates can specialize in one of two tracks: Track A focusing on sushi preparation, including making maki, hand rolls, nigiri, fish prep, rice, sauces, and garnishes while maintaining an organized station; or Track B centered on wok and hot line cooking, involving high-heat cooking techniques, precise timing, and maintaining consistency under pressure. Because the kitchen operates with a small team, all members contribute beyond their main stations, assisting with prep work, organization, support in deliveries, FIFO rotation, inventory, and closing duties.
The Sushi Chef or Wok Chef role requires dedication to food safety, sanitation, and allergen awareness, strict adherence to kitchen policies, and a professional demeanor. Employees must avoid phone and device use during shifts, maintain uniform and hygiene standards including non-slip shoes, and uphold a respectful, calm, and team-first attitude. Attendance and commitment are non-negotiable elements of the role, ensuring the smooth operation of service. Job Duties
- Execute service on sushi station and/or wok station based on your strengths
- Prep and portion ingredients, label/date, maintain pars, and stock stations
- Keep station organized, clean, and service-ready (clean-as-you-go)
- Follow sanitation, food safety, and allergen procedures consistently
- Support deliveries, FIFO rotation, and inventory organization
- Dishwashing and cleaning every shift: keep dish area organized, wash/put away, and complete end-of-night cleaning (floors, trash, stations, equipment wipe-down)
