The Regional Training Manager (Sushi Program) role is an exciting full-time opportunity based in either Dallas or Houston, TX. This position is field-based, requiring extensive travel to various franchisee locations and retail sites within these markets. In this critical leadership position, the Regional Training Manager will leverage expert-level sushi chef skills to train and support new and existing franchisees in mastering Fujisan's proprietary sushi preparation and operational program. The role demands a hands-on approach in delivering comprehensive training sessions, overseeing new kiosk openings, and ensuring strict adherence to food safety and brand standards. The RTM serves as the primary point of contact between franchisees, corporate teams, and local retail management, facilitating communication and alignment of operational goals.
Key responsibilities extend beyond training to include site evaluations for compliance with HACCP protocols and corporate guidelines, proactive operational support, and temporary management of vacant kiosk locations when necessary. This role is ideal for a motivated professional with culinary expertise, a passion for training and development, and excellent interpersonal skills to foster long-term franchisee relationships and operational excellence. Candidates should be comfortable working in a mobile, fast-paced environment with the flexibility to travel regularly across the assigned territory. Job Requirements
- High school diploma required
- minimum 1 plus year experience as a sushi chef in a fast-paced environment
- 1 plus year experience in training and development culinary instruction or franchise support preferred
- ServSafe or equivalent food safety certification strongly preferred
- working knowledge of HACCP protocols
- expert-level sushi rolling and preparation skills
- strong communication skills
- proficiency in Microsoft Office
- ability to travel frequently
- valid driver’s license
- comfortable working in a field-based mobile role
Job Qualifications
- Minimum 1 plus year of experience as a sushi chef in a fast-paced environment
- 1 plus year in training and development culinary instruction or franchise support preferred
- strong preference for ServSafe or equivalent food safety certification and a solid working knowledge of HACCP protocols
- expert-level sushi rolling and preparation skills
- strong communication and proficiency in Microsoft Office
- high school diploma required bachelor or culinary degree preferred
Job Duties
- Execute the Fujisan training program for new franchisees to ensure seamless self-sufficient kiosk operations
- successfully launch new kiosk locations and provide ongoing field support re-training and workshops
- act as the primary liaison between franchisees local retailer management and corporate teams to align operational expectations
- conduct on-site evaluations to ensure physical facilities meet strict food safety HACCP guidelines and corporate brand standards
- maintain a proactive approach to resolving field challenges including temporarily managing vacant kiosk locations during transitional periods
