The Sushi Chef I position serves as an entry-level role within Hana Group North America and is designed as a developmental opportunity for individuals aspiring to excel in Japanese cuisine, especially sushi preparation. This role focuses on teaching foundational culinary skills such as knife handling, sushi rolling techniques, and rigorous food safety practices. As a Sushi Chef I, you will be responsible for preparing authentic Japanese sushi rice, expertly cutting and filleting various fish and fresh vegetables, and ensuring the cleanliness and safety of your work environment. Success in this position requires attention to detail, quality control, and the ability to maintain composure during busy service periods.
In this role, you will gain hands-on experience and knowledge about the ingredients that define Japanese culinary art, learning how to inspect and select fish, vegetables, and other components in line with company quality standards. Your duties will include preparing sushi according to prescribed recipes that emphasize consistency in portion size, presentation, and food safety. Working closely with the kitchen team, you will also learn the importance of waste control and profit knowledge as part of creating a successful food service operation.

Job Requirements
- Minimum 6 months in the food service industry
- Sushi rolling experience preferred
- Ability to read, write and communicate in English
- Communicate with the customer or member to engage and understand their needs
- Valid food handler’s license with sound knowledge of food safety regulations
- Ability to stand for long periods of time
- Ability to work under pressure with sound judgement

Job Duties
- Cutting, slicing and filleting different types of fish and vegetables
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the supervisor when quality is sub-standard
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment in order to prevent food contamination
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Greeting and communicating with customers to ensure that they feel valued as our customer
