The role of Sushi Chef at Mandrake is crucial to achieving its vision of excellence. As a Sushi Chef, you will play a significant role in crafting sushi dishes that are traditional yet contemporary, using advanced cooking techniques such as foams, ISSI, sous vide, combination oven, curing, and hydrocolloids. Your expertise will be essential in ensuring that every dish served not only meets but exceeds restaurant standards for taste, presentation, and food safety. You will be responsible for preparing Japanese sushi rice with precision, expertly slicing and filleting various types of fish, and adapting orders to accommodate customer preferences and food allergies.

Beyond food preparation, the Sushi Chef will maintain a clean and organized work environment to prevent contamination, regularly take inventory of supplies, and communicate effectively with wait staff to ensure smooth operations. Working in a fast-paced setting, you will apply your skills to maintain consistency and high quality even during busy periods. Job Requirements

  • High school diploma or GED
  • Proven experience working in upscale sushi restaurants
  • Valid food handler's license
  • Sound knowledge of food safety regulations
  • Ability to work under pressure
  • Ability to stand for long periods of time
  • Excellent time-management skills
  • Exceptional customer service skills

Job Qualifications

  • High school diploma or GED
  • Associate's degree in culinary arts or American Culinary Federation (ACF) certification is preferred
  • Proven experience working in upscale sushi restaurants
  • Valid food handler's license
  • Sound knowledge of food safety regulations
  • Excellent time-management skills
  • Exceptional customer service skills

Job Duties

  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment to prevent food contamination
  • Regularly taking inventory of food supplies and other products
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met
