The Sushi Chef role at Sushi Den is a full-time position requiring an experienced culinary artist dedicated to crafting a rich array of sushi offerings that showcase fresh, high-quality ingredients. The role demands a thorough knowledge of traditional and contemporary sushi styles, including maki, nigiri, and sashimi, and the creativity to develop new menu items such as sushi burgers. The chef will play a key role in food preparation processes, including selecting the freshest fruits, vegetables, and raw fish varieties like salmon, tuna, and unagi. Meticulous attention to detail in preparing and seasoning sushi to balance flavors is essential, utilizing traditional complements such as ginger, rice vinegar, wasabi, and soy sauce.

This position also involves actively managing food preparation activities, overseeing inventory, placing orders as necessary, and coordinating with the wait staff to ensure all special dietary needs and allergies are respected and accommodated. The Sushi Chef must keep the kitchen and workspaces impeccably clean and hygienic, strictly adhering to proper food safety and sanitation standards. Candidates must be physically capable of lifting up to 50 lbs and be authorized to work in the US.

This role requires availability to work on weekdays, weekends, holidays, and nights, reflecting the nature of the restaurant industry. The ideal candidate will have at least five years of experience in sushi preparation as well as cooking in fast-paced restaurant environments. Excellent knife skills, the ability to work independently with minimal supervision, and the flexibility to handle multiple responsibilities around the sushi bar are critical. Job Requirements

  • Authorized to work in the US

Job Duties

  • Prepare all types of sushi including maki, nigiri, and sashimi
  • Select fresh fruits and vegetables for high-quality dishes like avocado, mango, and carrots
  • Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi, and soy sauce when appropriate
  • Manage food preparation activities such as boiling rice
  • Coordinate with wait staff to ensure proper cooking considering special requests and food allergies
  • Monitor food stock and place orders as needed
  • Recommend new, modern recipes such as sushi burgers
  • Maintain hygiene principles in all cooking areas and clean workspace at the end of the shift
