The Sushi Chef position at Momiji is a vital role responsible for preparing high-quality sushi and other ingredients according to detailed menu or customer specifications. Working in the sushi bar and kitchen environments, Sushi Chefs at Momiji ensure consistency in plating and taste by meticulously following recipes while also maintaining food safety and sanitation standards. They are tasked not only with expertly cutting, grilling, steaming, and frying ingredients but also with creating attractive presentations that appeal to customers visually and gastronomically. This role necessitates close collaboration with kitchen staff and servers to ensure seamless operation and timely service.

Sushi Chefs at Momiji also contribute beyond food preparation by assisting in ordering and stocking ingredients, managing inventory to minimize waste, and communicating with the Head Sushi Chef regarding kitchen supply needs or equipment concerns. The position involves physical demands such as standing for extended periods, lifting heavy items, and exposure to various kitchen conditions including heat and cold.   • exposure to extreme heat steam and cold present in a kitchen environment
  • manual dexterity to cut and chop foods and perform other related tasks
  • this position is not eligible for telework flex schedule or additional holidays

Job Duties

  • operate in the sushi bar and/or back of the house ensuring food is prepared safely effectively and according to specifications or requests
  • ensure ingredients and final products are fresh and complete
  • follow recipes including measuring ingredients weighing and mixing ingredients
  • bake grill steam boil fry and chop meat seafood fruits vegetables and grains
  • present and garnish final dishes so they are visually attractive
  • maintain a clean and safe work environment
  • contribute to stocking ordering and purchasing of ingredients ensuring necessary ingredients are available and fresh while minimizing spoilage/waste
  • communicate needs to the Head Sushi Chef
  • report any issues with kitchen equipment utensils or other supplies to the Head Sushi Chef
  • handle and store ingredients appropriately
  • maintain food safety sanitation standards policies and procedures
  • assist the serving staff as needed
  • assist other kitchen staff as needed
  • clean outside of kitchen such as dining room as needed
  • perform other duties as assigned
