- Must successfully pass the company’s sushi chef training program and cooking procedures
- previous experience as sushi chef highly desirable

Job Duties
- Greets and welcomes guests upon arrival to the sushi bar/lounge area
- prepares a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment including broilers, ovens, grills, and fryers
- responds promptly and courteously to guest requests and provides information about food
- ensures guests are satisfied with food quality and service
- performs shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- complies with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety, and sanitation
- maintains cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units, and food storage areas
- reports equipment or maintenance issues to the manager on duty and head sushi chef
- adheres to proper food presentation and garnishes for all dishes
- properly handles ready-to-eat raw food
- stores, labels, and rotates foods in compliance with public health safety laws
- follows Ecosure Best Practices for food handling and storage
- uses knives, hand tools, utensils, and equipment for food preparation
- keeps head sushi chef informed of inventory and reports any defective products or equipment
- presents a clean and neat appearance and uses courteous manners with guests
- immediately notifies manager on duty if guests are unsatisfied or if an accident occurs
- adheres to guidelines on alcoholic beverage service
- assists with preparation of sushi items and helper duties as required
- participates in ensuring special occasion celebrations are memorable
- may photograph or be photographed with guests as directed
- performs other duties as assigned by supervisor
