- Must successfully pass the companys sushi chef training program and cooking procedures
- previous experience as sushi chef highly desirable
- culinary degree a plus
- approved food handling training as required by local laws

Job Duties
- Greets and welcomes guests upon arrival to the sushi bar/lounge area
- prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
- responds promptly and courteously to guest requests and provides food information
- ensures guests are satisfied with food quality and service
- performs shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- complies with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
- maintains cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units, and food storage areas
- reports any equipment or maintenance issues to the manager on duty and head sushi chef
- adheres to company guidelines on food presentation and garnishes
- properly handles ready-to-eat raw food
- handles, stores, labels, and rotates foods in accordance with health safety laws
- follows Ecosure Best Practices for food handling and storage
- uses knives, hand tools, utensils, and equipment to prepare food for dining room, sushi lounge and bar
- keeps head sushi chef informed of inventory and equipment issues
- presents a clean and neat appearance and uses courteous manner with guests
- notifies manager on duty if guests are not satisfied or if accidents occur
- adheres to guidelines on alcoholic beverage service
- assists with preparation of sushi items and sushi helpers as needed
- participates in making guest special occasion celebrations memorable
- may be asked to photograph or be photographed with guests
- performs other duties as assigned by supervisor
