The position of Kitchen Steward at Fantasy Springs Resort Casino plays a critical role in sustaining the high standards of food safety and cleanliness that the casino is known for. This role is essential in ensuring that all kitchen work areas, restaurant equipment, and utensils are maintained in pristine condition. The kitchen steward will be responsible for performing a variety of duties related to deep cleaning and sanitizing kitchen environments, including heavy-duty tasks such as cleaning ovens, fryers, mixers, walk-in coolers, and other critical kitchen equipment. The role involves close collaboration with the Executive Steward and Stewarding Supervisor, following department policies, and employing safe handling practices for all cleaning chemicals and equipment. As the kitchen steward, the individual will also assist in areas beyond cleaning, such as sanitation and stocking, and will help maintain loading docks and recycling processes, underscoring the casino’s commitment to environmental responsibility.
This position requires stamina and physical endurance, including prolonged standing and walking, manual dexterity, and the ability to lift heavy objects up to 50 lbs. The job also entails working in conditions that may be exposed to moderate noise levels and second-hand smoke, particularly in the casino and bowling center areas. As the position is on the graveyard shift (3rd shift), the candidate must be adaptable to atypical working hours.

Job Requirements
- requires prolonged standing and walking for up to 6 hours
- requires normal mobility, hand/eye coordination and manual dexterity
- requires bending, lifting and reaching from floor to height of six feet
- requires lifting of up to 50 lbs
- requires transporting of materials and product, pushing, pulling, and maneuvering carts weighing up to 400 lbs
- requires normal sense of smell, taste, touch, and hearing
- requires the ability to distinguish letters and symbols
- must be able to work all shifts as scheduled
- work requires normal ability to tolerate standard chemicals used to clean and sanitize
- must be able to understand and comply with all company and departmental rules and regulations, policies, and procedures
- skill in establishing and maintaining effective working relationships with staff and guests
- must be able to properly communicate with internal guests
- must possess knowledge of use, cleaning, breakdown and maintenance of equipment
- must maintain a high level of sanitation and safety
- must be able to maintain a consistent work speed/pace under normal to busy operating/business conditions
- ability to understand basic English to allow safe work practices with chemicals, kitchen and cleaning equipment, safety signs, and other work related on the job information
- any combination of education or work experience that provides the required knowledge, skills and abilities to successfully perform the duties of the job
- previous experience in similar position is preferred but not required
- sanitation/food handlers certificate required
- must be 18 years of age or older

Job Duties
- Carry out and follow policies and procedures of Fantasy Springs Resort Casino
- follow direction from the Executive Steward and Stewarding Supervisor
- maintain proper use, cleaning and handling of all equipment and product
- maintain superior level of professionalism
- perform deep cleaning of worktables, walls, ceilings, refrigerators and other equipment as specified by supervisors
- deep clean ovens, flat tops, grills, fryers, mixers, kettles, walk-in coolers, freezers, doors and wash all floor mats
- clean floors by sweeping, mopping and using a floor scrubber
- separate and remove trash and recyclables in designated containers
- deep clean and steam garbage cans, drains and floors
- deep clean all kitchens and other food preparation equipment by hand
- wash all filters and hoods by hand
- clean all stainless steel surfaces as directed or needed
- notify guests and employees of safety hazards such as water on floor by placing proper signage and safety materials/cones in appropriate areas
- attend all safety and chemical handling training classes as provided
- ensure chemicals and containers are secure, properly stored, and disposed of following established procedures and standards
- maintain open communication with supervisors, peers, and management
- maintain knowledge of all kitchen and storage areas
- keep loading docks clean and sanitized and ensure cardboard is recycled using baler machine
- assist with cleaning, sanitation and stocking as required/needed
- execute all responsibilities and assignments timely
- ensure the highest degree of sanitation at all times
- maintain proper uniform and appearance standards
- complete all tasks within specified timelines
- perform other duties as assigned
