Job Description

Big City Diner is a well-established restaurant with a rich history rooted in the local community of Kailua. Founded in 1998 by Mr. Lane Muraoka, who began his career in the restaurant industry as a dishwasher, the diner has grown into a beloved local institution known for its award-winning food and exceptional service. Mr. Muraoka, a Kailua native and Iolani School alumnus, remains deeply involved in all aspects of the business, from hands-on daily operations to strategic leadership as President. Together with Corporate Executive Chef Dennis Franks, they have built a reputable dining experience that has thrived for over 25 years, emphasizing dedication, quality, and a strong team spirit.

We are currently seeking a dedicated Sous Chef to join the Big City Diner team. This role is vital to the smooth daily operations of our kitchen and to maintaining the high standards that our guests expect. As a Sous Chef, you will play a key role in overseeing kitchen staff, supporting menu development, managing inventory, and ensuring that food preparation meets our quality and safety standards. The ideal candidate will bring leadership skills, flexibility, and the ability to work collaboratively under pressure. Job Duties

  • Oversee kitchen operations to ensure efficient and smooth service

  • Assist in menu planning and development to maintain high-quality offerings
  • Monitor inventory and order supplies as needed
  • Ensure compliance with health and safety regulations
  • Work under pressure in a fast-paced kitchen environment
  • Maintain cleanliness and organization within the kitchen
