The Sous Chef role at Levy represents a pivotal leadership position within the culinary team, responsible for shaping and delivering an exceptional food and guest experience at the location. Reporting to the culinary management, the Sous Chef oversees day-to-day kitchen operations, drives culinary excellence, and plays a key role in training and coaching culinary staff. This role demands a seasoned culinary professional who combines a passion for quality food with strong leadership skills to motivate and develop a team typically consisting of 40 to 60 members. The Sous Chef ensures that all food preparation and service adhere strictly to Levy's sanitation and safety standards, upholds quality and flavor consistency, and manages operational aspects such as inventory, budgeting, and equipment maintenance.
Beyond culinary oversight, the Sous Chef actively contributes to operational improvements, coordinates game day culinary logistics to guarantee seamless execution, and supports menu planning through the creation and maintenance of recipe specifications and production diagrams. The position also involves managing employee schedules and breaks to ensure team wellbeing, conducting pre-shift meetings, and leading corrective actions when necessary. The role calls for flexibility with working hours to meet the demands of the location's schedule, which includes various shifts to support high-profile events and regular operations.

Job Requirements
- 5 plus years of experience or equivalent combination of education and culinary arts
- proven leadership in managing large culinary teams
- flexible schedule and availability to meet operational needs

- creating menu specifications as needed
- setting standards for chef table setups
- creating prep sheets and line layout diagrams to ensure consistent and efficient food production
- performing daily line checks to verify quality and flavor standards
- leading game day culinary operations
- managing end-of-month inventory in partnership with purchasing team
- proactively monitoring and managing food waste to drive cost control
- delivering training and coaching to team members on menu and culinary skills
- managing employee breaks to ensure well-being
- delivering pre-shift meetings
- conducting corrective action with team members
- completing onboarding and orientation for new culinary team members
- ensuring all food ordering, delivery, prep, transportation, and service comply with Levy's sanitation and safety standards
- supporting other Levy locations as needed
- supporting maintenance and update of recipes
- managing culinary department budget
- performing other duties as assigned
