We are currently seeking a dedicated and skilled Sous Chef to join our team at Raleigh Country Club. This full-time role plays a vital part in supporting the Executive Chef by managing daily kitchen operations, ensuring the highest quality of food preparation, and maintaining the standards that our members expect. Job Requirements
- Food safety certification
- Certification from American Culinary Federation or other hospitality association
- Proven experience in kitchen supervision
- Ability to stand for long periods and perform physical tasks
- Ability to lift up to 50 pounds
- Ability to work in hot, humid, and noisy environment
- Commitment to following safety and sanitation standards
Job Qualifications
- Familiarity with all standard kitchen equipment
- Awareness of occupational hazards and safety precautions
- Knowledge of food handling and preparation principles
- Ability to supervise kitchen food production employees
- Knowledge and ability to perform emergency procedures
- Food safety certification
- Certification from American Culinary Federation or hospitality association
Job Duties
- Prepares or supervises kitchen staff in daily preparation of soups, sauces, and specials
- Assists Executive Chef with inventories, pricing, cost controls, requisitioning, and issuing food production
- Conducts daily raw cost tracking counts
- Codes invoices to proper accounts and sends to Accounting
- Assumes charge of kitchen in Executive Chef's absence
- Assists with employee supervision, training, sanitation, safety, and menu planning
- Maintains standards of food quality, cost, presentation, and flavor
- Ensures proper staffing and controls food and payroll costs
- Recommends maintenance and repair of kitchen and equipment
- Prepares reports, arranges schedules, costs menus, and performs administrative duties
- Works in any assigned kitchen station
- Administers kitchen personnel benefits
- Consults with dining service staff during line-ups
- Maintains kitchen security including equipment and inventory
- Assists with food procurement, delivery, storage, and issuing
- Expedites food orders during peak service hours
- Supervises, trains, and evaluates kitchen personnel
- Coordinates buffet presentations
- Checks mise en place and food presentation before service
- Reports member and guest complaints and assists in resolution
- Monitors employee time records
- Submits operational improvement ideas
- Follows proper sanitation and hygiene practices
- Attends staff meetings
- Performs other assigned tasks
