The role of Sous Chef at Tatte is pivotal to the success and growth of the kitchen team at one of its cafes. As a Sous Chef, you will serve as the assistant overseer of all kitchen operations, providing leadership and supervision to a team comprising up to 25 employees including Zone Leaders, Cooks, Prep Cooks, and Dishwashers. This position demands strong leadership qualities, the ability to inspire and engage team members, and a genuine passion for culinary excellence. The Sous Chef will ensure that all kitchen activities execute smoothly, maintaining consistency with the cafe's high standards of food quality, safety, and presentation. This individual will step in to lead the kitchen especially in the absence of the Head Chef, taking charge in a fast-paced, high volume environment.
Key responsibilities include ensuring food production and service adhere to established guidelines, maintaining uniformity in recipe execution, portioning, and presentation, and completing all daily management tasks efficiently. The Sous Chef will engage deeply with the menu by conducting daily tastings, coach the kitchen staff on proper food preparation, hygiene, and safety protocols in line with company and regulatory requirements, and manage cleaning and maintenance schedules to uphold operational standards. Inventory management is a crucial component, with the Sous Chef ensuring supplies are in line with guidelines and that necessary products are available as needed. The role also involves supporting seasonal menu changes, thus requiring adaptability and a strong culinary acumen.
Working in this role entails a flexible schedule attuned to business needs, including working days, nights, weekends, and holidays. Physical demands are significant, requiring the ability to work lengthy shifts, stand or walk for extended periods, and lift weights of up to 50 pounds. Job Requirements
- Minimum of three years of culinary/kitchen management experience in a high-volume foodservice operation
- Comprehensive knowledge of food and proven passion for culinary excellence
- Understand the importance of quality product, visual presentation, efficient production, safety & sanitation, and food cost controls
- Knowledge and proficiency of Tatte’s systems, methods and processes that contribute to great execution
- Excellent communication skills with the ability to communicate professionally and effectively
- Highly organized with strong attention to detail
- High School education or equivalent
Job Qualifications

- Hospitality education - A.O.S. Degree in Culinary Arts or culinary certificate and required experience
- Proficiency working with Microsoft Office – Word, Excel and Outlook
- Previous experience working with UltiPro Onboarding & Recruiting, Toast - POS System, CrunchTime and Teamworx (highly preferred)
- ServSafe, Allergen and Chokesaver certifications
Job Duties
- Oversees production and service according to established guidelines
- Adheres to recipe, portioning, and presentation standards
- Complete all daily management tasks in a timely manner
- Establish a strong understanding of our menu through daily tasting
- Coach kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards
- Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas
- Maintains inventory to stay within established guidelines while assuring that necessary product is available when needed
- Assists with implementation of seasonal menu changes
