The role offered is a key position within the food and beverage division, directly supervising and managing food production areas to ensure smooth, efficient operations. Working closely with the Executive Chef, the individual will oversee the preparation of food items based on standardized recipes to maintain the highest quality, consistency, and presentation standards. The role also involves ensuring strict adherence to cleanliness, sanitation, and safety regulations within the kitchen and storage areas, while focusing on minimizing waste and maximizing the cost-to-production ratio. This position requires a hands-on leader who enjoys collaborating in a fast-paced, customer-centric environment, all while promoting teamwork and continuous improvement across departments.

In this role, being incredibly friendly, customer-oriented, and maintaining a positive and fun team atmosphere is essential. The ideal candidate will manage peak meal periods with a hands-on approach, monitor all food outlets and presentations for creativity, quality, and safety, and ensure timely setup and appropriate scheduling of well-trained cooks. The candidate will also assist the Outlet-Restaurant Manager and Banquet Manager with their duties and coordinate with other hotel departments to ensure seamless food and beverage services during conventions and group activities. Collaboration with Food and Beverage subordinates and supporting departments is vital to keeping operations on track, improving practices, and meeting departmental goals.

Furthermore, budget management including working within a set food cost and controlling waste forms a crucial part of the role. The candidate will also have a hand in menu creation for staff restaurants, promoting internal customer satisfaction. Participation in media and community events to showcase food and beverage products will be expected, enhancing the company’s brand presence. Maintaining compliance with municipal and state hygiene and security laws is mandatory, as is responding promptly to food-related feedback to ensure customer satisfaction and continuous quality improvements.

The role demands active involvement in department meetings and hotel committees to cultivate an inclusive and communicative working environment. Job Requirements

  • Ability to stand, walk and/or sit and continuously perform essential job functions for eight-plus hour shifts
  • Frequent twisting, bending, stooping, reaching, standing and walking
  • Frequent talking, hearing, seeing and smiling
  • Have a culinary degree or relevant hotel food and beverage experience
  • Prior experience in a high-volume food and beverage environment
  • Strong leadership and communication skills
  • Ability to work effectively in a team environment

Job Qualifications

  • Three or more years of progressive experience in hotel food and beverage experience or other successful food and beverage service industry
  • Culinary degree with two or more years of progressive experience in hotel food and beverage experience or other successful food and beverage service industry
  • Experience in high volume catering with hotel top brands and fine dining
  • Proven leadership and managerial skills supporting colleague growth, interdepartmental teamwork and exceptional customer service
  • Current on culinary trends and active in personal culinary development
  • Extremely creative with strong service skills
  • Demonstrated ability to energize a diverse team of culinary professionals
  • Computer literate

Job Duties

  • Be incredibly friendly, customer centric, love to smile and have fun in a team environment
  • Expedite peak meal periods by maintaining a hands-on approach
  • Monitor food outlets, buffets, stations and food displays for creativity, quality, cleanliness and food safety
  • Assure timely set up, schedule well-trained cooks in all areas in proper uniform
  • Assist the Outlet-Restaurant Manager and the Banquet Manager in their daily and weekly duties as needed
  • Assist food and beverage services for conventions and group activities at the hotel and coordinate with other hotel departments
  • Work with subordinates in the Food and Beverage Department to ensure smooth operations and improve existing practices
  • Work within monthly set food cost budget, adjust food requisitions and control waste
  • Oversee menu creation for staff restaurants
  • Promote teamwork within the Kitchen department and maintain relationships with supporting departments
  • Participate in media and community opportunities to showcase food and beverage products
  • Ensure all hygiene, sanitation and safety laws are followed
  • Respond to food-related feedback and generate proper reports
  • Ensure kitchen equipment is maintained and in good working order
  • Participate in Department Head and Food & Beverage meetings and support departmental communication and hotel committees
