The role of Sous Chef at Boise State University is a full-time position that plays a crucial part in the campus dining experience. Reporting to the Executive Chef, the Sous Chef supports the preparation and cooking of foods, supervises kitchen and food-service associates, and ensures all food is prepared according to approved recipes and production standards. This role is essential for maintaining the smooth operation of the kitchen, especially in the absence of the Executive Chef. The position offers a competitive hourly wage ranging from $25.00 to $27.00, depending on experience, and includes a comprehensive benefits package. In this role, the Sous Chef will coordinate activities among cooks and food-service associates, ensuring that all deadlines related to production orders are met. The Sous Chef also plays a pivotal role in staffing by handling interviewing, scheduling, payroll, training, counseling, and employee reviews, as well as recommending disciplinary actions when necessary. Interactions with customers are handled professionally to resolve complaints and provide service in a friendly, customer-oriented manner.

Additionally, the Sous Chef will be responsible for monitoring inventory, deliveries, product consumption, and waste. This monitoring ensures that supplies and product levels are maintained and orders are fulfilled on time. The cleanliness of workstations, equipment, and display areas during meal services must also be upheld to meet all sanitation, safety, and merchandising requirements. This position not only requires culinary expertise but also strong leadership, organizational, and communication skills to contribute effectively to the team environment.

Job Requirements

Job Duties

  • Cook and prepare food following approved recipes and production standards
  • Ensure all deadlines are met based on production orders
  • Supervise hourly food service associates including interviewing, scheduling, payroll, training, counseling, and participating in reviews
  • Store food according to all corporate, state and federal food safety and sanitation procedures
  • Ensure proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
  • Maintain sanitation of equipment, supplies, and utensils
  • Clean workstation thoroughly before leaving area
  • Interact with customers to resolve complaints in a friendly, service-oriented manner
  • Monitor inventory, deliveries, product consumption, and waste
  • Relay relevant information directly to supervisor
