The position available is a critical role within the culinary operations team, reporting directly to the Chef De Cuisine or another designated supervisor. The individual in this role will be responsible for supporting all aspects of culinary operations, including the oversight of food production, operational efficiency, and sanitation standards throughout the facility. This position demands strong leadership, excellent organizational skills, and a deep commitment to maintaining high standards in food quality and safety.

Key responsibilities of the role include managing daily culinary operations, creating innovative menu offerings inspired by guest and client feedback, and ensuring compliance with health and safety regulations. The successful candidate will be tasked with monitoring food and labor costs, maintaining inventory controls, and fostering positive customer relations through professional communication and quality service delivery. This role requires someone who is detail-oriented, proficient with Microsoft Office tools, and capable of adapting to the dynamic and fast-paced environment typical of large-scale culinary operations.

Job Requirements

  • Degree or certification from an accredited culinary arts institute
  • minimum three years experience in a high-volume full-service food operation
  • must have excellent leadership and communication skills
  • knowledge of kitchen sanitation and operation of kitchen equipment
  • ability to work extended hours including nights, weekends and holidays
  • must be able to lift and move 50lbs
  • ability to stand or walk for long periods
  • must be available for all stadium events
  • must be flexible to provide support at other facilities in emergencies
  • ability to obtain Food Protection Manager Certification
  • must be detail oriented and organized
  • proficient with Microsoft Word, Excel and PowerPoint
  • ability to multi-task in fast paced settings
  • must practice safe work habits

Job Qualifications

  • Degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation
  • minimum three years experience in a high-volume full-service food operation
  • proven track record in improving kitchen efficiencies, quality and relative costs
  • excellent leadership, financial analysis, team building and communication skills
  • knowledge of kitchen sanitation, operation and maintenance of kitchen equipment
  • detail-oriented and extremely organized with the ability to learn new programs and procedures quickly
  • proficient on Microsoft Word, Excel and PowerPoint
  • flexible to work extended hours including nights, weekends and holidays
  • open to providing incidental or short-term support to other facilities in emergencies
  • ability to obtain Food Protection Manager Certification
  • ability to multi-task in a fast paced, team orientated setting
  • ability to read, speak and write in English
  • sufficient mobility to perform assigned tasks including reaching, bending, stooping, wiping, pushing and pulling for extended periods
  • ability to lift, push and pull approximately 50lbs
  • able to stand or walk for long periods
  • available for all stadium events
  • practice safe work habits and complete required safety training

Job Duties

  • Overall management of culinary operations of assigned department
  • daily schedules, coordinate and actively participate in operations and monitor food and labor cost
  • ensure all products used in the preparation of menu items meet high standards
  • create innovative menu offerings in response to guest and client feedback
  • lead team with respect and commitment to exceeding guest expectations daily
  • monitor all food preparation and kitchen activities to ensure compliance with Health Department regulations
  • write, cost, test, maintain and update all menu specifications, recipes and pictures, production forecasts, and ensure same are being followed
  • adhere to and enforce inventory and labor control measures
  • provide efficient service and quality products through positive customer and client relations
  • ensure all workstations, storerooms and dining areas remain clean, sanitized, safe and in proper working order at all times
  • perform other duties as assigned
