The Catering Sous Chef position, based at our Toledo Complex in Toledo, OH, is a critical role under the direction of the Executive Chef. This position is responsible for supporting all facets of catering culinary operations, including oversight of daily catering production, operations, and sanitation across culinary and stewarding services throughout the facility. Working closely with the Catering Director, the Sous Chef helps ensure the overall success of the catering operations.
This hands-on leadership role demands a high level of expertise in managing multiple food outlet kitchens, with responsibilities spanning from food receiving, inspection, and selection of only the freshest fruits, vegetables, meats, and fish, to ensuring compliance with Health Department regulations regarding food storage and rotation. The sous chef actively participates in food production and culinary staff leadership, particularly focusing on sanitation standards to meet local health requirements.
Ideal candidates will hold a degree or certification from an accredited culinary arts institute or an apprenticeship certificate from the American Culinary Federation, accompanied by at least five years of experience in a high-volume full-service food operation. This role requires excellent leadership, financial analysis, team-building, communication, and customer service skills. Proficiency in Microsoft Word, Excel, and PowerPoint is essential, as is flexibility to work extended hours including nights, weekends, and holidays. Travel may be required, and occasional short-term support to other facilities during business emergencies is expected.

Job Duties
- People and product focused hands-on leadership of day-to-day operations of food outlet kitchens as assigned
- possess high level of multiple outlet management knowledge and experience
- ability and knowledge to receive and inspect, select and use only the freshest fruits, vegetables, meats, fish and other food products of the highest standard in the preparation of all menu items
- assists in monitoring proper receiving, storage and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating and placing items in proper storage containers to ensure products freshness
- participates in the production of all food items necessary for the operation as directed by Executive Chef
- participates and assists with leading culinary staff in the sanitation standards of all kitchens to assure compliance with local health department standards and company standards
- provides efficient service and quality products by maintaining positive customer and client relations through effective communication and prudent financial practices
- works in other Kitchens within the operation as needed
