The role offered is a kitchen management position critical to the overall food service operations within the hotel. This position is hourly with a salary of $22.00 per hour and does not include tips, service charges, or discretionary performance bonuses. The successful candidate will be responsible for planning and managing the kitchen staff in all stages of food procurement, production, preparation, and presentation. The role demands strict adherence to safety and sanitary regulations to maintain a healthy working environment. This leadership role involves overseeing the kitchen’s daily production to guarantee that all food served in hotel restaurants and room service meets high standards of quality and consistency that align with HEI franchise policies. The manager will also handle HR responsibilities within the kitchen, including hiring, scheduling, coaching, and performance evaluations, ensuring the team is motivated and well-supported.
Additionally, this position requires the management of kitchen maintenance and sanitation standards, ensuring compliance with federal, state, corporate, and franchise regulations. Financial oversight is a key component, with duties including monitoring labor and food costs and preparing reports to maintain budgetary goals without compromising quality. The role promotes an accident prevention program to minimize workplace accidents and related costs. Supporting the Executive Chef in menu creation, costing, and implementation of seasonal and special menus is also a critical aspect, alongside assuming the Executive Chef’s responsibilities when needed. Regular attendance and reliable availability are essential, and the candidate must be willing to perform any other job-related duties assigned. Job Requirements
- High school diploma or equivalent
- minimum five years experience in kitchen management or related position
- knowledge of food safety and sanitation regulations
- ability to work flexible hours including weekends and holidays
- strong leadership and organizational skills
- proficiency in budget monitoring and cost control
- excellent communication skills
- physical ability to stand for long periods and lift heavy items if necessary
Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- five plus years of employment in a related position
- hotel experience preferred
- advanced knowledge of food profession principles and practices
- knowledge of hotel operations including marketing plans, safety programs, and labor relations
- leadership skills to motivate and develop staff
- ability to work effectively under time constraints and deadlines
- effective verbal and written communication skills
Job Duties
- Manage the daily production, preparation, and presentation of all hotel food
- manage human resources in kitchen production and preparation areas including hiring and training
- schedule and manage kitchen maintenance and sanitation
- monitor and control labor and food costs
- promote accident prevention programs
- assist the Executive Chef with menu creation and costing
- assume Executive Chef responsibilities in their absence
