Job Requirements

  • Currently reside in the UK
  • Eligible to work in the UK without sponsorship
  • Previous experience in a similar Sous Chef role
  • Experience with high-volume and conference catering
  • Ability to work flexible hours including evenings and weekends
  • Strong leadership and team management skills
  • Good knowledge of health and safety standards
  • Competent in menu costing and food preparation

  • Proven experience in high-volume kitchen environments

  • Ability to manage kitchen teams and operations

  • Excellent organizational and leadership skills
  • Ability to work under pressure and meet deadlines
  • Good communication and client service skills
  • Experience with stock management and financial control in catering

Job Duties

  • Ensure prompt service of all meals and services at required times to company standards and delegate satisfaction
  • Under instruction of head chef, prepare and present food for restaurant consumption and be available during service periods
  • Assist the chef with menu planning and costing
  • Ensure preparation and presentation methods comply with catering standards
  • Prepare and assist at special functions outside normal hours
  • Assist in recruiting kitchen team members
  • Manage back of house food service team daily, implementing training and development
  • Conduct weekly team meetings in head chef absence
  • Handle performance management issues and take action with general manager consultation
  • Prepare weekly staff rota and timesheets in head chef absence
  • Maintain high appearance standards in catering department
  • Order food and beverages for smooth daily running in head chef absence
  • Liaise with facilities supervisor for disposables and cleaning items
  • Brief waiting staff on daily menu and monitor portion control
  • Respond promptly to client requests and report to head chef
  • Serve on hot counters ensuring catering standards during service
  • Liaise with events team regarding upcoming events and requirements
  • Conduct quality and standards checks in catering area
  • Ensure high service level from food service team
  • Familiarize with venue budget and assist in catering department business planning
  • Administer invoices and purchase records
  • Work with front of house for stock rotation and reconciliation
  • Maintain adequate stock levels
  • Provide monthly stock and purchasing info to general manager
  • Control staff budget for temporary staff and authorize overtime with general manager
  • Adhere to health, safety, and fire regulations
  • Maintain personal cleanliness and hygiene standards
  • Wear correct dress/uniform
  • Maintain kitchen and bistro hygiene and safety
  • Secure stores and areas of potential loss and report losses
  • Ensure COSSH and HACCP compliance
  • Assist in writing and implementing risk assessments
  • Perform regular maintenance checks and report issues
  • Attend bi-monthly food meetings
  • Carry out management requests including duty shifts
  • Build good relations with venue staff
  • Support client events outside normal hours
  • Attend company events and training as requested
