Job Requirements
- Education or certification in culinary arts or related field
- Three to five years of commercial cooking experience
- Knowledge of HACCP food safety standards
- Ability to lead and mentor kitchen staff
- Strong organizational and communication skills
- Proficient in Microsoft Office applications
- Ability to work on-site full time in Des Plaines, Illinois
- Commitment to maintaining hygiene and safety standards
- Experience with inventory management and cost control
Job Qualifications
- Three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
- Knowledge of food and hygiene regulations including HACCP
- Strong understanding of financial controls such as food cost management, stock level control, and waste minimization
- Excellent communication and organizational skills
- Service orientation
- Proven leadership skills
- Proficiency in Microsoft Office and Windows-based computer applications
Job Duties
- Executes and supervises food production activities such as cleaning, cutting, marinating, seasoning, cooking food items
- Assumes responsibilities of Executive Chef during absences including menu presentations to customers
- Supervises, coordinates, and controls kitchen helpers in food storage ensuring cleanliness and FIFO compliance
- Conducts, coordinates and supervises inventory processes
- Monitors material consumption and orders required food and equipment daily to meet production plans
- Participates in food product and menu development for presentations
- Updates catering manuals as necessary and executes countermeasures for customer complaints
- Supports training and development of kitchen helpers
- Maintains hygiene, health and safety standards in compliance with HACCP regulations
- Conducts quality control checks of food and goods received
- Ensures recipe specifications are followed
- Organizes, staffs and directs kitchen operations effectively
- Guides, motivates and develops kitchen staff aligned with Human Resources policies
- Implements company values and management principles within the department
- Controls cost budgets and initiates corrective actions when necessary
- Participates and supports company initiatives including Global Quality Standard, HACCP, and Lean Manufacturing
