Job Requirements

  • High school diploma or equivalent
  • prior sous chef experience in dynamic kitchen environments
  • weekend availability
  • ability to work 40 hours per week including day and evening shifts
  • certification in CPR and First Aid
  • Serve Safe certification
  • strong communication and leadership skills
  • ability to maintain kitchen cleanliness and organization
  • capacity to manage labor and food costs effectively

Job Qualifications

  • Proven experience as a sous chef in restaurants with daily changing menus
  • ability to create and implement successful back of house operating systems using appropriate and available technology
  • demonstrated passion for working with food
  • history of regular promotions through various kitchen positions
  • experience in diverse kitchen settings including high-end restaurants and numbers-oriented chains
  • successful management of labor and food cost budgets
  • skilled in training and developing staff
  • reputation for maintaining an exceedingly clean kitchen
  • excellent relations with front of house staff
  • certified in CPR and First Aid
  • serve safe certified

Job Duties

  • Develops new menu items under direction of owner and documents recipes and procedures
  • ensures that all food meets quality and presentation standards
  • cooks soups, sauces, and meats according to DERU standards
  • resolves customer complaints that are escalated or requests assistance from owners
  • orders and oversees inventory of kitchen supplies excluding office and liquor
  • regularly teaches staff classes such as Welcome to the Roadhouse, Back of House Orientation, and Basic Food Safety
  • leads weekly DOR huddles with staff
  • establishes and maintains good communication and a positive working relationship with managing partner, chef, service director, and front of house staff
