Job Requirements

  • Maintain a warm and friendly demeanor at all times

  • Participate in manager on duty (M.O.D.) coverage as required
  • Maintain regular attendance according to scheduling needs
  • Maintain high standards of personal appearance and grooming including wearing nametags
  • Comply with InnVentures Hotel Standards and regulations for safety and efficiency
  • Identify and assist in solving productivity and operational problems
  • Handle problems by anticipating, preventing, identifying and solving them
  • Maintain confidentiality of sensitive information
  • Perform other duties as requested by management
  • Work collaboratively with other food and beverage managers and keep them informed
  • Keep immediate supervisor informed of issues requiring attention
  • Coordinate all phases of loss prevention in kitchen areas
  • Prepare and submit required reports timely
  • Monitor quality of all food products and presentations
  • Ensure preparation and submission of reports including wage progress, payroll, revenue, employee schedules and quarterly action plans
  • Oversee all aspects of daily kitchen and food production
  • Make cooks aware of daily forecasts and customer counts
  • Ensure compliance with standard operating procedures (SOPs) and requisition procedures
  • Conduct staff performance reviews
  • Implement and monitor corporate promotions
  • Know and enforce local health department sanitation laws
  • Compute daily food costs
  • Collaborate with Director of Food & Beverage to create and implement menus
  • Assess food portion size, visual appeal, taste and temperature
  • Check stations for proper food storage and sanitation
  • Verify food purchases for quality and pricing
  • Oversee daily activities such as food preparation, sanitation, inventory logging and food cost reporting
  • Prepare daily food production sheets
  • Cut meat, poultry and seafood according to business demands
  • Ability to work long hours
  • Medium physical work exerting up to 50 pounds occasionally and/or 20 pounds frequently

Job Qualifications

  • At least 4 years of related progressive experience or culinary graduate with at least 2 years of progressive experience in a hotel or related field
  • Knowledge of food and beverage preparation techniques
  • Understanding of health department regulations, liquor laws and sanitation standards
  • Strong communication skills both verbal and written
  • Leadership and team management abilities

Job Duties

  • Ensure all meals are well prepared with regard to quality, consistency, eye appeal, taste and food cost
  • Provide training for all kitchen staff
  • Meet corporate quality standards
  • Assist in establishing and enforcing food specifications, portion control, recipes and sanitation
  • Control food and labor costs while maximizing guest satisfaction
  • Respond to guest complaints in a timely manner
  • Oversee daily kitchen operations including food preparation, sanitation, inventory, and reporting
