The role of Sous Chef is offered through Sanza Food Service at the Amerant Bank Arena venue in Sunrise, FL. This full-time, salaried position reports directly to the Executive Sous Chef and requires flexibility to work evenings, weekends, and holidays in accordance with event schedules. The Sous Chef will play a vital leadership role in the day-to-day kitchen operations of a high-volume sports and entertainment venue. This position demands a culinary professional who brings 3 to 5 years of relevant experience, thrives under pressure, and is passionate about delivering exceptional food quality at scale.
The Sous Chef is responsible for assisting the Executive Sous Chef in managing kitchen operations during events, overseeing food preparation, service, and post-event breakdown. This role requires managing high-volume food production across multiple food and beverage outlets within the venue, ensuring all dishes meet the highest standards of quality and presentation. The Sous Chef also monitors food production timelines to guarantee service readiness before event start times. Leadership is fundamental, with duties including supervising, training, and mentoring line cooks, prep cooks, and kitchen staff. Effective delegation and fostering a positive, team-oriented kitchen culture are critical to maintaining smooth operations during peak event days. In addition, the Sous Chef assists in scheduling kitchen staff to meet the demands of both events and daily operations.
Food safety and regulatory compliance play a central part in this role, with the Sous Chef enforcing strict adherence to food safety, sanitation, and health code regulations at all times. This includes conducting regular line checks, maintaining temperature logs, and ensuring a clean, organized, and safe kitchen environment. Collaboration on menu development, seasonal offerings, and event-specific menus with the Executive Chef is also required. The Sous Chef assists with ordering, receiving, and managing inventory, while monitoring portion control and minimizing waste to support cost management and food cost targets within budget parameters.

Job Requirements
- 3–5 years of culinary experience preferably in high-volume venue
- Experience supervising or leading kitchen staff
- ServSafe or equivalent food handler certification
- Ability to work flexible hours including evenings, weekends, and holidays
- Strong organizational and time management skills
- Excellent communication and leadership skills
- Ability to stand for extended periods and lift up to 50 lbs
- Comfortable working in hot and cold kitchen environments
Job Qualifications
- 3–5 years of progressive culinary experience preferably in high-volume or large-scale venue
- Proven experience in a supervisory or lead cook role
- Strong knowledge of kitchen operations, food safety standards, and sanitation practices
- ServSafe certification or equivalent food handler certification

- Excellent organizational and time management skills
- Strong communication and team leadership abilities
- Culinary degree or equivalent professional training preferred
