Job Description

Communal is one of Utah's original farm-to-table kitchens, renowned for over a decade for its dedication to thoughtful, seasonal cuisine that emphasizes strong partnerships with local farmers, ranchers, and producers. Located in an intimate 44-seat dining space, the restaurant prioritizes quality and craftsmanship over volume, offering brunch and dinner service six days a week with menus that evolve seasonally. This approach allows Communal to focus on in-house preparation of nearly everything on the menu, from stocks and sauces to breads, pastas, desserts, and charcuterie, ensuring the highest standards of taste and presentation.

We are currently seeking an exceptional Sous Chef to join our culinary team and work closely with the Executive Chef. This critical leadership role involves managing daily kitchen operations, maintaining Communal's exacting culinary standards, and fostering a positive and professional kitchen culture. The Sous Chef will play a vital role in ensuring precision, organization, and beautiful execution throughout the preparation and service processes, ensuring every plate reflects the restaurant's commitment to quality. This is an excellent opportunity for a chef who thrives in a dynamic environment with frequently changing seasonal menus, values scratch cooking techniques, and is passionate about mentoring and leading a talented kitchen team.

As a Sous Chef at Communal, your responsibilities will span from executing daily prep with exceptional consistency to overseeing the preparation of seasonal ingredients and components. You will utilize impeccable knife skills and classical as well as modern cooking techniques. You will lead and mentor line cooks, enforce strict sanitation and food safety standards, and assist in ordering, inventory management, recipe execution, and food cost control. In the absence of the Executive Chef, you will take full ownership of the service to ensure smooth operations. This role requires someone highly organized, adaptable, and dedicated to craftsmanship over shortcuts who desires to grow professionally within the Heirloom Restaurant Group. Job Qualifications
