Marywood University, located at 2300 Adams Avenue in Scranton, Pennsylvania, is currently seeking passionate and skilled individuals to join their culinary team in the role of Sous Chef. This opportunity is offered on a full-time basis with flexible scheduling options, including varied days and hours as well as weekend flexibility. The Sous Chef position plays a vital role within the dining services at Marywood University. Reporting to the Executive Chef, the Sous Chef is responsible for assisting in the preparation and cooking of foods according to established recipes and production standards. This leadership role requires coordination of kitchen staff and other food service associates, ensuring smooth operations and superior quality output. The Sous Chef assumes full responsibility for kitchen activities in the absence of the Executive Chef, demanding excellent organizational and supervisory skills.
This role is ideal for culinary professionals who have prior food service, culinary, and management experience, and who are ready to take on leadership responsibilities in a dynamic educational dining environment. The Sous Chef will oversee food preparation to meet production requirements and maintain high standards of food safety, sanitation, and presentation. This position involves supervising hourly associates, which encompasses interviewing, scheduling, payroll activities, training, counseling, performance reviews, and disciplinary actions where necessary. Maintaining inventory, controlling waste, and interacting with customers to provide outstanding service are also key components of the role.

Job Qualifications

Job Duties
- Cooks and prepares food following approved recipes and production standards
- Ensures all deadlines are met based on production orders
- Supervises hourly food service associates including interviewing, scheduling, payroll, training, counseling, participating in reviews, and recommending disciplinary action
- Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures
- Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures
- Maintains sanitation of equipment, supplies and utensils
- Cleans workstation thoroughly before leaving area
- Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements
- Interacts with customers to resolve complaints in a friendly, service-oriented manner
- Relays relevant information directly to supervisor
- Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers
- Keeps up with peak production and service hours
- Monitors inventory and deliveries of product and supplies
- Tracks product production, consumption and waste
- Informs supervisor when supplies or product are low
- Performs other duties as assigned
