The Sous Chef role at Paws Up Montana is a key leadership position within the culinary team, essential to upholding the resort's high culinary standards and creating unforgettable dining experiences for guests. This position requires managing daily kitchen operations with a hands-on approach, overseeing prep, cooking, and service activities while ensuring quality, consistency, and timeliness on every dish served. Unique to this role is the involvement with various outdoor cooking methods—including grilling, smoking, open-flame, and campfire cooking—as part of delivering authentic Montana-inspired cuisine across different resort venues, mobile kitchens, and remote event sites. These diverse cooking environments demand an adaptable, skilled chef comfortable in non-traditional settings, weather variability, and remote locations, consistently maintaining food safety and sanitation protocols.

In addition to culinary leadership, the Sous Chef plays a vital role in team development and operational efficiency. This includes collaborating closely with the Executive Chef and the broader Food and Beverage team to coordinate production standards, manage special guest requests, and handle food allergy and dietary requirements sensitively and expertly. They are responsible for conducting inventory management, ordering food supplies and equipment, and ensuring smooth logistics to meet fluctuating guest demands. The role also involves interviewing, hiring, training, coaching, and performance managing culinary staff to foster a professional, collaborative, and adaptable kitchen culture.

Job Requirements

  • Ability to stand, walk, bend, and perform physical work outdoors in variable weather
  • Willingness to work flexible hours including weekends and holidays
  • Ability to lift and maneuver heavy equipment and inventory up to 50 lbs
  • Attention to detail and commitment to excellence
  • Strong communication and leadership skills
  • Ability to maintain clean appearance and professional behavior
  • Ability to adapt to fast-paced, high-expectation environment

Job Qualifications

  • High school diploma, GED, vocational training, or certificate in culinary arts or relevant field
  • Experience as Lead Line Cook, Kitchen Supervisor, or Sous Chef preferred
  • Proven ability to plan menus and control inventory
  • Hands-on experience with outdoor cooking methods preferred
  • Professional and hospitable demeanor
  • Ability to work independently and collaboratively
  • Valid Food Handler's License
  • Valid State Driver's License

Job Duties

  • Assist the Executive Chef in overseeing kitchen operations
  • Direct line cooks and perform culinary tasks
  • Lead outdoor cooking operations including grilling, smoking, open-flame, and campfire cooking
  • Coordinate daily with culinary leadership and Food and Beverage team
