The role of Sous Chef at Rand Tower is essential in maintaining the high standards of food quality and service for which Pyramid Global Hospitality is known. Reporting directly to the Executive Chef, the Sous Chef assists in coordinating and participating in the preparation and cooking of dishes, ensuring that every item meets established quality and presentation standards. This position involves expert knowledge of cooking techniques, flavor profiles, and plating to create memorable and visually appealing dishes. The Sous Chef is also responsible for properly handling food storage, inventory control, and ensuring clean and sanitary work environments compliant with industry regulations. This role demands a hands-on leader who fosters a collaborative atmosphere, supports team members, and upholds safety and sanitation standards, including ServSafe and OSHA requirements.

Compensation for the Sous Chef position ranges between $65,000 and $70,000 annually, reflecting the responsibility and expertise required. Job Requirements

  • Ability to arrive at work on time and when scheduled
  • ability to stand on feet 8-10 hours a day and work in a fast-paced environment
  • physically able to move/lift large, heavy objects such as hotboxes, food inventory, and supplies
  • ability to communicate effectively with guests and team members verbally or in written form, over the phone or in person
  • ability to learn, follow and enforce standards for cleanliness as they apply
  • ability to follow all safety procedures/standards and able to recognize and act in emergency situations

Job Qualifications

  • High school diploma or equivalent
  • previous culinary experience in a professional kitchen
  • knowledge of food safety and sanitation standards
  • familiarity with inventory and supply management
  • strong leadership and communication skills
  • ability to work in a fast-paced environment
  • ServSafe certification or equivalent preferred
  • experience in plating and presentation
  • ability to work flexible hours including holidays and weekends

Job Duties

  • Prepare and cook dishes with expert knowledge of cooking techniques, flavor profiles, and plating
  • cut, trim, bone, and carve meats and poultry for cooking
  • properly store foods following wrapping, dating, and rotation procedures
  • ensure quality and consistency of product taste and presentation
  • utilize approved food recipes and production standards to meet quality, serving temperatures, and portion control
  • meet all deadlines in food production based on production orders
  • assist the Executive Chef with inventory and ordering supplies
  • ensure clean work areas, equipment, and utensils compliant with sanitation requirements
  • interact with staff and customers and resolve customer complaints in a friendly and service-oriented manner
  • comply with company service standards, inventory, and cash control procedures
  • ensure compliance with sanitation, ServSafe, OSHA safety, production, and merchandising requirements
  • assume responsibility for kitchen in absence of Executive Chef
  • perform other duties as assigned
