The role of Sous Chef at Mt. Bachelor Assisted Living and Memory Care is a vital leadership position within the culinary team, tasked with delivering superior dining experiences to residents, their guests, and staff. The Sous Chef supports the Executive Chef in planning, developing, and executing menus that are both appetizing and nutritious, taking into account dietary restrictions and preferences common among older adults. Job Requirements

  • Have culinary Arts degree or equivalent experience
  • have two years of experience in institutional or full-service restaurant cooking
  • demonstrate ability to communicate effectively, both verbally and in writing
  • ability to prepare varying quantities of set recipes by converting common measurements and equivalents
  • ability to arrange things or actions in a certain order or pattern according to a specific rule or set of rules
  • ability to collect data, establish facts, and draw valid conclusions
  • ability to hear well amongst loud background noise
  • meet state or provincial health related requirements
  • maintain food handlers permit as required by state or provincial regulations
  • maintain any certifications as required by state or provincial regulations

Job Duties

  • Assist in the development, costing and execution of menus and menu items
  • assist in interviewing and training kitchen personnel
  • assist in reviewing work procedures and operational problems in order to determine ways to improve production, service, performance and safety
  • monitor food preparation methods, portion sizes and garnishing and presentation of food
  • test cooked food by tasting and smelling to ensure palatability and flavor conformity
  • assist in developing and enforce scheduled cleaning, stocking, rotation and maintenance tasks
  • estimate food consumption in order to anticipate amounts to be purchased
