The role of the Sous Chef at Lucky Strike Entertainment demands a blend of culinary artistry, management prowess, and operational acumen. As a guardian of the Food and Beverage (F&B) program, you will be expected to keep standards consistently high by adhering to company-mandated food menus and purchasing protocols. Key responsibilities include managing costs related to food, labor, and supplies, reviewing monthly profit and loss statements, and adjusting strategies to maintain budgeted revenue streams. This role also involves collaborating closely with the Operations team and Sales staff. In the absence of the Kitchen Manager or Executive Chef, the Sous Chef will take charge of planning, supervising, and executing all banquet functions — overseeing food preparation, service, and clean-up.

Additionally, you will play an essential part in resource management by estimating food consumption, ensuring appropriate purchasing decisions, and scheduling kitchen staff effectively to meet fluctuating business demands. Partnership with management to resolve disciplinary issues and foster a cooperative team environment is also a critical function. Maintaining product quality through supervision of food preparation, portioning, garnishing, and storage is required, along with managing kitchen equipment maintenance and compliance with local Department of Health regulations through sanitation audits.

The role emphasizes a safe and clean work environment, requiring proactive measures to maintain hygiene and safety standards. Immediate reporting of critical issues to the General Manager ensures quick resolution and smooth operations. The physical demands involve typical entertainment environment activities, including walking, bending, standing for extended periods, and lifting objects with assistance.

Job Requirements

  • Minimum 1-3 years of kitchen supervisory experience in high-volume retail, entertainment, hospitality, or restaurant venues
  • Experience with catered events and special events preferred
  • Equivalent combination of education and experience accepted
  • Current ServSafe certification required
