- advanced knowledge of weights, measures and various cooking techniques

Job Duties
- Maintain cleanliness in compliance with company standards and health department guidelines
- responsible for maintaining daily/weekly logs
- meet with Executive Chef and Chef de Cuisine to review assignments, anticipated business levels, changes and other information
- assist Executive Chef, master cooks, cooks, and helpers to ensure optimum service
- produce production list to ensure efficient execution of service
- create and maintain staff schedule and requests
- maintain exceptional menu knowledge and attention to detail with plate presentation
- prepare hot and cold items demonstrating various cooking techniques
- maintain knowledge of food products and apply culinary techniques
- read, measure and execute recipes
- comply strictly with state sanitation/health regulations and restaurant requirements
- maintain knowledge and proper use of kitchen equipment
- comply with departmental policies, service procedures, and standards
- supervise in the absence of Executive Chef and Chef de Cuisine
- train master cooks, cooks, and dishwashers on job responsibilities
- ensure superior food quality and correct irregularities
- work collaboratively assisting guests and employees
- communicate effectively with management, chefs, and service staff
- work on line during service and assist as needed
