The Sous Chef serves as a key leader in the kitchen, ensuring that the high standards of quality and excellence are upheld through effective team management and food production. They are responsible for sustaining a fully staffed kitchen, overseeing all food preparation activities, maintaining recipe adherence, managing kitchen associates, and enforcing safety and sanitation protocols.
The Sous Chef works closely with the kitchen team to drive productivity while minimizing waste, managing cooking times, conducting line checks, and ensuring the presentation of food meets Fleming’s high standards. Job Requirements
- Minimum of 2 years prior kitchen supervisory or kitchen management experience
- Minimum of 2 years of previous polished casual or fine dining experience preferred
- Availability to work a flexible schedule
- Legal authorization to work in the United States
- Must be at least 21 years of age
- Basic computer proficiency preferred

Job Duties
- Drive high-quality employee standards by maintaining a fully staffed kitchen, fostering an inclusive environment, developing kitchen associates, and holding the team accountable in a supportive way
- Implement effective security protocols to ensure the ongoing safety of employees and guests
- Drive restaurant results by supervising set-up and food production areas, maximize productivity, minimize waste, ensure line checks, testing, training, recipe adherence, expo management, cook times, and proper cooking
- Take pride in presenting quality food by ensuring all menu items follow recipes and meet presentation standards
- Enforce safety and sanitation practices by maintaining immaculate facilities and showcasing a passion for excellence
